Depectinised Tamarind concentrate is a special variant of Tamarind Concentrate of a higher brix which is 78 - 80 degrees. This process involves treating the Tamarind Juice after extraction with bio-pectinase enzyme to remove the natural Pectin inherent in the ripe Tamarind fruit; before concentration. Thereby, Depectinised Tamarind Concentrate is more soluble than Ordinary Tamarind Concentrate ( OTC ) of 65 degree brix. Depectinised Tamarind Concentrate is mainly used by our clients in the manufacture of flavours, Tamarind beverages which are transparent and Candies. Since the process and technology for this product are different, Depectinised Tamarind Concentrate is priced higher. We reiterate that Depectinised Tamarind Concentrate is of a much higher degree of brix of 78 degrees as compared to Ordinary Tamarind Concentrate which is 65 degree brix.
